Join us for Community Cooks: a monthly virtual dinner party and cooking demonstration. January’s cook, Nisa Fernando will be sharing her mother’s recipes from their home country of Sri Lanka. Nisa is a homemaker and looks forward to sharing what she believes is one of the world’s best cuisines, using authentic spices and techniques that make her food delicious and wholesome. Come learn how to cook traditional coconut roti, tomato fry, and a cup of milk tea! Ingredients list is below so you can cook along!

Ingredients for Coconut Roti 

(This measure is for family of 3 - 4)

4 cups of white or wheat flour (bleached or unbleached). Taste better with white flour

2 cups of grated coconut (usually you can buy frozen coconut flakes in any Indian stores)

1 cup of finely chopped onion, preferably red onion

½ cup of finely chopped Jalapeno peppers (with or without seeds – depend on how hot you like)

5-7 Fresh curry leaves -optional (Curry leaves also available in Indian store)

2-3 chopped green onions

2 tablespoons of butter

3 tsp of salt (or salt to taste)

1 ½ cup of water (to make a soft dough that does not stick to your fingers)

Ingredients for Tomato Fry.

4 sliced medium well ripe tomatoes

1 teaspoon mustard seeds

1/2 jalapeno pepper chopped (seeded or seedless)

1 sliced medium onion (yellow or red)

5- 6 curry leaves (finely chopped)

2-3 Tablespoons of olive/canola oil

1/2 teaspoon of crushed red pepper

A pinch of turmeric

Salt to taste

Tasty cup of milk tea (Black Tea with Milk)

Boil 3 cups of water add 2 pods of crushed cardamom. and add a couple of black tea bags or 1 teaspoon of tea powder. Boil it for a couple of minutes and add a cup of fresh milk (whole or other) and heat up a little more and strain to cups. You can add sugar or honey to taste.
