Community Cooks: Paella with Dakota Soifer Online

Join us for the first of a new monthly series called "Community Cooks". We invite you to gather online with us for a virtual dinner party and cooking demo. A new cook every month will be sharing recipes close to their heart and culture. Ingredients lists will be released a week prior so you can cook along!

December's Community Cook: Dakota Soifer. Dakota is the Chef and Owner of Cafe Aion (located near the University) and has been cooking Spanish inspired dishes for the past 10 years. He has won Cutthroat Kitchen and received local and national recognition from Food and Wine, Esquire and 5280 Magazine. Paella has become a signature dish at Cafe Aion, representing an iconic and traditional dish as well as the wonderful shared way of eating. Paella is a traditional Spanish rice dish, flavored deeply with saffron, tomatoes and a variety of additional meat, seafood and vegetables.

Paella Kits available to purchase (not required and full ingredients list will be available): Everything you need to create a delicious paella at home! Ingredients and supplies:

10” Paella Pan: can be purchased locally at Café Aion.  (Can use any 10” pan or larger… (just increase ingredients by 25% for a 12”)

Paella Base

1 yellow onion, julienned

5 cloves garlic, chopped

2 tablespoons olive oil

Pinch of saffron

¼ teaspoon Spanish paprika

28 ounce can of crushed tomatoes

 

Paella

¼ cup + 1 tablespoon paella base

½ cup + 2 tablespoons Arborio rice

1 teaspoon salt

2½ cups stock (chicken or veggie) (Might need another 1/2c later on) 

1 link of Spanish chorizo, cut into ½ inch slices

½ pound of bone-in chicken

½ pound of shrimp (cleaned and deveined)

½ cup roasted red peppers, chopped

Vegetarian option

Sub 1c cubed butternut squash and cauliflower florets
